Costco may call them muffins, but they are cake. Who's kidding who(m)? And that's what this recipe uses~ one chocolate cake mix. It is SO nice to have that deliciousness at home without having to go through the $300 trip to the warehouse store!
Copycat Costco Chocolate Chip Muffins:
1 devil's food cake mix (or dark chocolate)
3 eggs
1/4 cup milk
1/4 cup sour cream
1/3 cup oil
2 tsp vanilla
2 Tbsp flour
1 tsp baking powder
1 1/2 cups milk chocolate chips
In a large bowl, mix all of the ingredients except the chocolate chips with a mixer until smooth. Stir in the chips. Spoon the muffin batter into 48 well greased mini muffin cups. Bake at 350 degrees for 12 minutes or until the muffins spring back when touched. Let cool for 5 minutes in the pan and then move to a wire rack.

when I first glimps on the photo I thought it's grapes =) when I took a second look whoa it is a cutie little chocolate muffins. I would love to taste those muffins.
I am not a member of Costco, so I have never tried them. However, thanks to this recipe, I can make my own. These are perfect for when you crave a little chocolate pick me up!

This is a sweet that, because it is shaped in small balls, I could just pick one ball every time I would pass in front of them and no one could realize it until the bowl would be empty lol! Delicious!
Costco baked goods really are amazing.. their big cookies happen to be some of my favorites! These copycat muffins sound delicious... and you don't even need a membership to eat them!

I used to eat costco muffins a lot...until I realized they were probably worse for me than mcdonald's! I love this at-home version!

You are so funny, no, not just you... My kids (and me sometimes shhh!) go crazy with Costco muffins. See, I don't bake, and all they see is muffins from outside home... AND my husband insist to buy something different for breakfast all the time (you know, bagel, toasts, pancakes, just variety), so we once in a while buy it from Costco. Dangerous Costco muffins! I love your idea of making it mini size! It takes up so much freezer space when I buy it. I'm going to keep this recipe!
We call it the $200 club cuz you cannot walk out of there for under that. I love shopping there for meat. But I have the same issue with muffins and rolls. Way too big and too many. Although the muffins freeze well. I used to half them for mini-me's lunches and freeze them. These are her fave and I am so happy I can now make them at home. Thanks to you. Cuz your brilliant. And cute muffins just rock the house. I love small food, it's just so adorable.
