Mediterranean Pizza: Sour Cream and Lemon Improv Challenge

Welcome to another month's Improv Challenge!  January is all about Sour Cream and Lemons.  I fully intended to make lemon hand pies with sour cream crust this month.  I had it all planned out.  I had found a couple of recipes to use as spring boards to create something wonderful.  And then BANG!  My mind was beset with thoughts of pizza.  And oh boy!  What a pizza this was, especially seeings it was my last wheat pizza.
I mixed store bought pesto with sour cream for the sauce of the pizza.  The cheese was mozzarella and sun-dried tomato feta.  The toppings were roasted peppers, lemon zest, chicken breast and sauteed shiitake mushrooms.  Ooodelally! This was Fan.Tas.Tic!!  The lemon gave the pizza an unexpected zing that I really liked.

Mediterranean Pizza:
pizza crust
1/4 cup pesto sauce
1/4 cup sour cream
3 ounces cooked chicken, cut into little tiny pieces
zest of one large lemon, chopped
1 roasted red pepper, cut into small pieces
4-5 mushrooms, sliced and sauteed in olive oil
3 ounces feta, crumbled
3 cups shredded mozzarella
garlic powder
Roll out the dough to make a large pizza (or two small ones).  Combine the pesto and sour cream in a bowl and spread over the unbaked pizza dough.  Sprinkle with the cheeses.  Add the toppings and sprinkle the whole pizza with a healthy dash of garlic powder.  Bake 450 degrees for 12 minutes.

Oh, how fabulous, Kristen!!! I'm always amazed at the creativity from our group!!! I never would have dreamed of making pizza, but here you made an outstanding one. Now pass me a slice, please :)

This is a darn beautiful pizza! I'll bet the lemon really brings out the flavor. Plus, those toppings would go great on a non-wheat crust, too. I saw one on pinterest with a cauliflower crust!

That sounds awesome Kristen - especially the pesto sour cream mixture. I'm not always a big fan of pesto by itself because it's often too rich, but the sour cream would tone it down and make it so creamy. Definitely need to file away that little tidbit!

Thanks for organizing the challenge, Kristen. I've learnt a lot doing this challenge for the first time ... like, I don't know how to paste a linky properly, found out that I can actually set a scheduled time to publish (yeah, I'm that illiterate) and found a fantastically different pizza base sauce ... this is really something to make soon! Lovely!

White pizzas are my fave! Totally ♥ grilled chicken on pizza, but I bet shrimp would be incredible with that touch of lemon.

Holy cow Kristen!!! I think this is the most creative use of the ingredients I've seen so far! But all of the components make so much sense! I would never have thought of using lemon and sour cream on pizza, but oh my goodness, what a fabulous idea! I can just imagine how the lemon enhanced all the other flavours, and the creamy texture and richness of the sour cream would be just wonderful. I am so intrigued by this recipe, and can't wait to give it a try! If you have time, I'd love it if you would share it with The Gallery of Favorites this weekend :)

(PS -I'm sorry it was your last wheat pizza, but talk about going out with a bang! I bet you'll develop / find a yummy gluten free pizza crust in no time too!)

All right - I love all the ingredients but never would have mixed the sour cream with anything - but looking at it and listening to your boundless enthusiasm - I'm going to have to play with this. That's the best thing about pizza - you can combine and play and just gives right back to you!
