Pumpkin Pie

Pumpkin pie is not just for Thanksgiving.  That's why the grocery stores sell canned pumpkin and evaporated milk all year long!  My family sometimes just gets a yen for some pumpkin pie...in June or April or September.  The time of year doesn't matter.  As long as I have a couple of cans on the shelf, I can whip up a couple pies in no time.  This recipe makes two pies.  We make quick work of them here.  However, if I didn't have whipped cream on hand, I would have two entire pies left.  Whipped cream is an essential accompaniment in my family's opinion.
 Unlike some recipes floating around on pumpkin cans, this one doesn't take nutmeg, but with ginger, cinnamon and allspice, you won't miss it.  This is a very flavorful pie.  I really like it made with fresh pumpkin, but that isn't always possible and the canned stuff is almost just as good.
 One year, my second oldest son requested this for his birthday instead of cake.  Long time readers may have noticed that we don't stick to traditional birthday cakes very often in my house.  Between cheesecakes, pies, giant cookies and specialty cakes like St. Louis Gooey Butter cake, we probably average only one real cake a year.
You can wait for Thanksgiving if you want, but if you think pumpkin pie might taste good right now, give this a shot.  You won't be disappointed.


Pumpkin Pie:
1 1/2 cups sugar (or 1 cup honey or real maple syrup + 1/2 cup sugar)
1 can evaporated milk
4 eggs
3 cups pumpkin
3 Tbls flour
1/2 tsp vanilla
1 1/2 tsp cinnamon
1 tsp allspice
1/2 tsp ginger
Combine all ingredients in a large bowl with a whisk or spoon. Pour into 2 pieshells. Cover your pie edges if you don't want them dark (I have 3 Mrs. Anderson's pie shields and I love them). Bake 400 degrees 40 minutes.

I love pumpkin pie, but developed an allergy to cinnamon. Like you, we go for non- traditional b'day cakes! Following you on google follower now!

I have never had pumpkin pies until I came to the US. Since my very first bite, I fell in love with the pie and I eat it whenever I get a chance (I don't bake, so it's up to the parties where I find this kind of pie). I never bothered to check recipe either as I don't bake, but I was actually surprise to see your recipe because it's mix, pour, and bake (with pie shell). Maybe I can try my own pumpkin pie sooner than I thought!

Thanks for this, I have never tried pumpkin pie but have been very curious. I need to find pumpkin, canned if possible. I guess it will be difficult to find here

My family thinks this is just for the fall but I love it anytime. It is like roasting a turkey and done less often than other times of the year.

I'd much rather have pie than cake! I asked for a cherry pie once for my birthday :) I don't know why I only make pumpkin pie once a year...have to change that habit!

Pumpkin Pie in June?...Wow! I thought I was on the wrong post...LOL
...and why not? I love pumpkin pie, and I could eat it all year long. Your pie is so perfect, creamy, smooth. Love the recipe, as well.
No canned pumpkins to be found this time of year in our supermarkets, in S. Florida. I found about 3 cans of pumpkins in my daughter's cupboard that she squirred away, guess she's saving it for a "rainy day."

I love pumpkin pie but never think to make it during the non-traditional time of year. I had to laugh when you wrote that stores sell the ingredients year round - so true! Your pie looks great!

Oh lord you went there! Autumn is only 3 very long hot (and birthday packed) months away and now you've got me drooling over a pumpkin pie! I know they are great any day of the year but tell that to my picky BF! I can't wait till the crisp days of fall arrive and I am back baking pies!
