Your Recipe, My Kitchen: Hot Chocolate Cake

As I continue to make my way through the huge amount of bookmarked recipes I have gathered in the 2+ years I have been blogging, I have realized I will never get to the end.  As soon as I make one recipe, I find two or three more to replace it.  It just never stops.

This week, I am featuring Hot Chocolate Cake (which was originally called Hot Cocoa Bread) which I found on the blog Chickens in the  Road.  I figured it was appropriate for this time of year, especially considering where the mercury has been spending its time on the thermometer lately.

Because my family likes lots of flavor in their hot chocolate, I added mint and more vanilla and more marshmallows (which have a tendency to melt and disappear in the cake anyway).  Other than that, I kept the recipe pretty much the same.  I think adding chopped up Hershey's candy cane kisses would have been better than the marshmallows.
The flavor was SO chocolaty.  It was completely like eating a solid cup of hot chocolate.  The cake was amazing fresh, right out of the oven.  The next day, however, it was really, really dry.  To compensate, I drenched the slices of the cake in Hershey's chocolate syrup.  That made a huge difference.  

Hot Chocolate Cake (from Chickens in the Road)
1/2 cup butter, softened
1/2 cup cream cheese
1 1/2 cups sugar
1 egg
2 tsp vanilla
1/2 tsp mint extract
1 1/4 cups cocoa
1 1/4 cups buttermilk
2 1/4 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup mini marshmallows (or big ones cut into quarters)
Cream butter, cream cheese and sugar.  Add egg and flavorings.  Add the cocoa and 1/2 cup of the buttermilk.  Mix well.  Add all of the remaining ingredients except the marshmallows.  Stir in the marshmallows.  Spread in a greased loaf pan.  It makes a very large loaf.  It overflowed my pan, so if you are using a regular sized bread pan, consider a pan underneath to catch anything that may fall.  Bake 350 degrees 1 hour or until done.

Oh, that was a surprise. I know a hot chocolate cake recipe that uses hot chocolate mixes. That's what I was expecting this one to be, too.
