Banana Cake with Cream Cheese Frosting

 Over the Christmas holidays, my sister in law celebrated a birthday.  I told her to pick out whatever meal she  wanted for that night's celebration.  She chose this cake for dessert.  It is one my mom started making when I was a little girl.  I have so many memories of her bringing a frozen cake out of the freezer for dessert.  I loved eating the cake and frosting when they were almost thawed, but still cold and firm.  This was the only way I would ever eat anything made with a banana.  Somehow the thick frosting and spices covered the banana flavor enough for this banana hater.
 It's delicious fresh, too.  Spicy and incredibly moist, topped with a thick layer of cream cheese frosting this is one of the best ways of using up over-ripe bananas.  For a 9X13 pan, I used six bananas.  It is a really thick cake.

Banana Cake: (9X9 size)
1 stick butter
1 1/2 cups brown sugar
2 eggs
1 tsp vanilla
1/2 cup sour cream
2 cups flour
1 tsp baking soda
1/2 tsp cloves
1 tsp cinnamon
3 well mashed bananas
Cream the butter and brown sugar.  Add the eggs, vanilla and sour cream.  Combine the dry ingredients and add.  Add the bananas last.  Pour into a greased 9 X 9 pan and bake 325 degrees for 40 minutes or until done.  (The center of this cake always sinks just a bit when it's done....it's okay). Frost.  Keep cake in the refrigerator.  You may freeze this cake.  Put waxed paper over the frosting and then wrap the entire pan in foil.

Cream Cheese Frosting:
1 8 ounce brick cream cheese
2 Tbsp butter
2 tsp vanilla
2 cups powdered sugar
Beat the butter and cream cheese until well combined.  Beat in the vanilla and powdered sugar.  Spread on a completely cooled cake.

Six bananas -- that really is a big cake! It sounds delicious coming right out of the freezer. And cream cheese frosting makes everything taste awesome.

I love banana cake! For my daughter's first birthday I made her banana cupcakes with peanut butter frosting. It's now her little brother's birthday and this looks great for him! Would it hold up to being fashioned into Buzz Lightyear's face? It would involve cutting it up and pretty extensive frosting. Possibly some cursing too.

This cake makes me feel all cozy and home-y. It's simple, moist, and sweet. Who could ask for more?
I also like the smaller size of this cake. You get the treat, but it doesn't last all week (In a house with only two, you tend to think about these things, sorry!).

My MIL made a cake similar, but topped it with maple flavored icing. That, too, was a yummy treat!

I'm totally on board for cake from the freezer! My husband thinks I'm a crazy person for this but I always throw a slice in there for myself when we have leftovers after b-days or something! Yum! Your banana cake sounds great, I love spicy cakes!

Love this blog, brings back lots of fun memories from all my Birthdays:) My father and I would request this cake for our Birthday EVERY year. When I moved to Arizona, no one had heard of banana cake. I wondered if it was a Mid-West or East Coast favorite? So my mom would send me a banana cake box mix to help satisfy my cravings:) I am definitely saving this blog, and will maybe make if for my Birthday this weekend:)

I made your Banana cake the other evening to send to a new mom for a group meal. I added a Peanut Butter Frosting to it. Poor Big Guy - he had been looking forward to it (from smelling it). Was so disappointed when it wasn't on the table for dinner! The mom LOVED it! Great recipe! Enjoying your blog!
