Yellow Squash Casserole

I had a bag of yellow squash given to me this week. This is what I did with it:

Yellow Squash Casserole:
8 cups yellow squash, cut into small pieces and cooked in the microwave 6-9 minutes
3 cups shredded sharp cheddar cheese
1 small jar chopped pimentos
2 cups crushed buttery crackers (like Ritz or Club)
2 eggs, beaten
4 Tbls dried onion flakes
salt & pepper to taste
4 Tbls butter melted
2 cups milk, scalded (heated in the microwave for 3 minutes)
Combine all ingredients but milk. Pour milk over everything and fold slightly. Bake 350 degrees for one hour.

If you look beyond the bread, you will see almost a dozen huge zucchini. Never tell anyone you are missing having squash if you aren't prepared to have a TON dropped on you doorstep! I am still not sure what I am going to make besides some fudge cake...let me know if you have any freezable ideas. Thanks!

I love the idea of cooking squash in the microwave. My exhaust fan is broken, and I start to panic when steam drifts close to the fire alarm (I fan a cookie sheet). But the microwave! Why didn't I think of this?! The casserole looks lip smacking--and so does your bread!

Do you have a recipe for your bread?
As for the zucchini, I vote for fritters (savory).

I like your comment about not telling you miss zucchini's...
You could make a great tasting soup with it. You could also fill them with spagettisauce with mince meat,top with cheese and bake in the oven and put that in the freezer...Thanks for sharing!

There is so much to do with zucchini -- Wives with Knives has a recipe for zucchini cheddar scones. I've made moussaka with zucchini instead of eggplant.

When I just can't take another loaf of zucchini bread, I sautee slices in a little olive oil, butter, salt, pepper, and Marjoram (not margarine). Saute until they start to caramelize. Heavenly! Another idea, zucchini boats... lots of recipes online for those.

Oh, I love zucchini!!

We make a cinnamon zucchini cake (http://joyinmykitchen.blogspot.com/2009/09/cinnamon-zucchini-cake.html) that freezes really well, and I also freeze a lot of it shredded so that we can enjoy baked goods in the winter.

Your casserole and bread look delicious. A very quick suggestion...cube zucchini, stir fry until just tender in olive oil, pour skillet contents over pasta, sprinkle with a copious amount of Parmesan, toss and serve with black pepper to individual taste.

Puree some squash and freeze in an ice cube tray. Later, you can sneak a cube or two into things like spaghetti sauce or BBQ sauce for some extra nutrition/fiber. Also works well with pumpkin.
