Wide Eyed Pizzas

We are eating these fun little burgers this week. I have been making them since I was in 3rd grade (too many years ago to count). They are pizza flavored burgers with cute faces on top made out of olives and pimentos (I already know my son, The Engineer, will pick all of the olives off). If you have any ideas for alternative eye material, please let me know! The recipe and picture are straight from my 1970s Betty Crocker's Cookbook for Boys & Girls.

Wide Eyed Pizzas: 1 8oz can tomato sauce
1 pound ground beef
1/2 cup dry bread crumbs
1/2 tsp salt
1/2 tsp oregano
olive slices
1/2 cup shredded mozzarella
1/2 cup shredded cheddar
a few slices pimento for mouths
Mix the beef, 1/2 cup of the tomato sauce, bread crumbs, salt and oregano in a bowl. Divide into 4 pieces and form 1/2 inch patties. Place on a cookie sheet. Pour about 2 Tbls of the remaining tomato sauce into the middle of each patty and spread it to the edges. Bake 425 degrees 15-20 minutes or until meat is done. Remove pan from oven and turn off oven. Sprinkle each "pizza" with about 2 Tbls of each kind of cheese. Using the olives and pimento slices, decorate with eyes and mouths. Return the pan to the oven for about 5 minutes or until cheese is melted.

Broiled English Muffin Pizzas

Cereal


Dinners include:
Wide Eyed Pizzas, French Fries, Green Beans, Spaghetti Squash,
Frozen Pizza (cheater night)
Shrimp Scampi, carrots
Red Beans & Rice, cauliflower, corn
King's Ranch Chicken Casserole, peas


Desserts include:
Pear Puppies
peanut butter pinwheel cookies
dessert crepes

Those wide eyed pizzas are the cutest things I have ever seen...but I have no alternate ideas in place of olives / pimientos...I would pick off both as well!

How about mini pickles? Cut them into slices.. those would make great eyes...

for me, the eyes would be jalapenos. Keep the olives.. ew.
