There is nothing like a food blogger who cannot find her camera to get the whole house in an uproar. Attempts at taking pictures of this scrumptious meal with my cellphone also proved futile as my phone USB cord is also A.W.O.L. Tomorrow there will be a lot of unpacking done, let me tell you!!!
Macaroni and Cheese
1 lb package macaroni (to be honest, I used mini shells, because that is what I found)
1/2 stick butter
1/4 cup flour
1/4 tsp dry mustard
2/3 cup milk
3 cups shredded cheese (I had some Mexican blend and some "casserole blend" by Kroger)
3 oz cream cheese
1 1/2 cans evaporated milk (2 1/4 cups?)
Melt butter in a good sized pot. Add flour and stir until smooth. Whisk in milk and mustard. Add cheeses and stir until thoroughly melted and smooth. Place uncooked noodles in a greased casserole. Pour evaporated milk over noodles. Spoon cheese over noodles. Cover with foil and bake at 350 degrees for and hour (unless your oven is hot or maybe if you are at sea level, then you will want to set the timer for 45 minutes and then just watch it until the noodles are done).
