Banana Coffee Cake:
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 or 3 ripe bananas, mashed with a fork
3/4 cup sugar
1 egg
1/3 cup oil
topping:
1/3 cup packed brown sugar
1 Tbsp butter
1/2 tsp cinnamon
1 Tbsp flour
Combine dry ingredients in a small bowl. In a larger bowl, mix the egg and sugar with a spoon. Add the oil and banana. Add the dry ingredients and mix until just moistened. Pour into a greased baking pan (9 X 9). Combine topping ingredients with a fork or pastry blender until crumbly. Sprinkle on top of cake batter. Bake 375 degrees for 30-35 minutes or until done.
***If you want to make these into muffins instead of a big cake, divide the batter into greased muffin tins, sprinkle on the struesel and bake for 18-20 minutes or until they test done.
