This week I am cleaning out the freezer. Some of the recipes I am using are tried and true and some are just plain shooting from the hip. Monday night's dinner was an original creation:
Smoked Sausage Skillet:
1 16 oz precooked Polish sausage link, sliced
1 pkg ronzoni whole wheat egg-less noodle type pasta, cooked
1 brick Green Giant baby peas in butter sauce, thawed in microwave about 3 minutes
1 can cream of celery soup
1/2 bag frozen pearl onions (these didn't go over well with the kids, next time, I will just add 1 Tbls dehydrated onion)
1 cup grated cheddar cheese
Break up peas & butter sauce in skillet, add soup, meat and onions. Heat through. Add pasta and combine. Top with cheese. Easy and delicious.
Dessert was a well loved family recipe:
Pumpkin Roll:
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
Beat eggs until light yellow. Add sugar, pumpkin and lemon juice. Beat well. Combine dry ingredients and add. Grease and line a jelly roll pan with waxed paper (I use a silicone baking sheet instead of waxed paper). Spread mixture in pan. Bake 375 degrees 15 minutes. Turn out on a dish towel sprinkled with powdered sugar. Remove waxed paper, roll up in the towel and let cool. Meanwhile, make filling. Cream together:
1 cup powdered sugar
6 oz cream cheese
4 Tbls butter
Add 1/2 tsp vanilla.
Unroll cake, spread with filling, reroll, chill or freeze.

I love doing a pumpkin roll. I usually don't make it except for at Thanksgiving. The smoked sausage skillet sounds wonderful, too!
